you know i love me a one pot soup dumpling dish, so since everyone & their mom was making dumplings in a thai red curry sauce, you know i had to give that a go too - and obviously she was goooood 😮💨 spicy, creamy and oh so delicious
ingredients
base:
- 1 tbsp oil
- 1 garlic clove, minced
- 1/2 shallot, minced
- 1 tbsp Thai red curry paste
- 1/2 cup coconut milk (use half first before adding the rest)
- 1 cup chicken broth
- 1 tsp sugar
- ½ tbsp fish sauce
- 1 tsp lime juice
- 10 frozen soup dumpling
toppings:
- Red chillies
- Chopped coriander
- Lime slices
- Chilli Oi
method
- Sauté the aromatics – In a claypot over medium heat, add a little oil and fry garlic and shallots until aromatic and start to soften
- Cook the Thai curry paste – Add in the red Thai curry paste and stir fry for 2 minutes or until it gets fragrant and the oil starts to separate
- Make the curry broth - add in half of the coconut milk and mix that into the paste, fry it off until it thickens. Once thickened, add the rest followed by chicken broth, fish sauce, sugar and lime juice. Bring to a boil and taste season to taste
- Cook the dumplings – Add frozen soup dumplings to the claypot. Reduce to a simmer, cover, and cook according to package instructions (around 15 minutes, or longer if the tops still look undercooked).
- Garnish & serve – Remove the lid and top with coriander, chilli oil, lime slices and chilli. Have any remaining sauce with rice or noodles!
