Here's one of my favourite staples I've been making ever since Uni. Not only is this recipe absolutely DELISH but it's quick too! Flavourful, saucy salmon ready in under 30 minutes.
ingredients:
• 2 salmon slices
• 1 tbsp oyster sauce
• 1 1/2 tbsp light soy sauce
• 1 tbsp brown sugar
• 1 tsp garlic ginger paste
• 1 tbsp water
• 1/2 tsp chilli flakes (adjust to liking)
• 1/2 tsp sesame oil
• less than handful chopped coriander/cilantro
method:
- Marinate the salmon - in a bowl, add all of the marinade ingredients and give it a good mix - taste and adjust to liking. Add in the two salmon fillets and let it marinate for at least 15 minutes.
- Cook the salmon - in a pan over medium heat, add some neutral oil and pan fry the salmon for a total of 10-12 minutes making sure to fry on each side of the salmon (around 2 minutes each side) before then placing it skin side down to fry the remainder of the cook time. When almost down, pour in the remaining marinade mixture and coat the salmon.
- Serve and enjoy - When cooked, serve the salmon over rice, noodle, salad or whatever you prefer!
for an oven or air fry version:
* in a baking dish, put a large sheet of foil and add marinated salmon pieces and marinade
* fold ends of foil sheet to form a parcel (basically enclosing the salmon in the foil)
* bake at 190° for 10-15 (depends on thickness, for this size I usually do 12 mins)
* open up the parcel to expose the top of salmon, then continue to bake for 5 minutes at 200° or until top starts to brown.
