Scissor-Cut Noodles with Spicy Chilli Oil Sauce

Homemade noodles without having to roll, stretch or own a pasta machine? Say less. These scissor-cut noodles are made with just flour, water and salt, then snipped directly into boiling water to create thick, chewy little noodles. Toss them in a spicy, garlicky soy and black vinegar sauce, finish with a generous pour of hot oil and you've got yourself a bowl of noodles that's way easier to make than it looks!

Possible Substitutions

  • Plain flour: Bread flour can also work and will give the noodles a slightly chewier texture.
  • Oyster sauce: Use vegetarian oyster sauce if needed.
  • Chilli oil: Use your favourite chilli crisp, chilli sauce or homemade chilli oil.

Things to Keep in Mind

  • Cooking time will depend on how thick you cut your noodles, so use 2-6 minutes as a guide and taste one before draining.
  • Make sure your water is properly boiling before you start cutting the noodles.
  • Be very careful when cutting the dough directly over boiling water. Keep your hands clear of the steam and water, and use kitchen scissors with a comfortable grip.

These noodles are best eaten fresh, but you can store cooked noodles in an airtight container in the fridge for up to 2 days.

Method

Make the noodle dough

Add the flour and salt to a bowl and mix together.

Slowly pour in the water in stages, mixing as you go. This makes it easier to control the hydration - you may need slightly more or less water depending on your flour.

Bring everything together into a dough, then knead until you have a smooth, firm ball.

Cover and let the dough rest for 30 minutes.

Cut the noodles

Bring a large pot of water to a rolling boil.

Take your rested dough and hold it securely over the pot.

Using a clean pair of kitchen scissors, snip small pieces of dough directly into the boiling water.

Try to keep the pieces relatively similar in size so they cook evenly.

Cook the noodles

Cook the noodles for around 2-6 minutes, depending on their thickness.

Mine took around 4 minutes.

Give them a gentle stir occasionally to prevent them sticking together.

Once cooked, drain well.

Make the spicy sauce

Add the hot noodles directly to a bowl.

Top with light soy sauce, black vinegar, oyster sauce, sugar, chilli oil, chilli powder, minced garlic and spring onion.

Heat 1 tbsp neutral oil until very hot, then carefully pour it over the garlic, spring onion, chilli powder and chilli oil in the bowl.

Give everything a good toss until the noodles are coated in that spicy, glossy sauce.

Serve

Finish with fresh coriander and some greens on the side.
