These juicy pork & coriander 'baos' are not only delicious but can be made in around 30 minutes, and it's all thanks a quick hack using yogurt and baking powder.

- 175g pork mince
- 25g coriander chopped
- 2 garlic, minced
- 1 tsp ginger, minced
- 1 shallot, minced
- ½ tbsp light soy sauce
- 1 tsp salt
- 1 tsp chicken powder
- ½ tbsp black vinegar
- ½ tsp white pepper
- ¼ tsp sichuan pepper
bao dough
- 100g plain flour
- 1 tsp baking powder
- 80g yogurt

chilli oil, coriander, sesame seeds
method:
- Prepare filling - In a bowl, mix all the filling ingredients together for a good 5 minutes until well combined and the meat looks paste-like. Keep refrigerated
- Make the dough - In another bowl, mix the ‘bao’ ingredients until a dough forms, poke your finger in the middle to create a donut, then portion out 5 pieces. Flatten out each piece and roll out until it's a circular wrapper, repeat for all pieces.
- Form baos - Remove the mixture from the fridge, spoon ½ - 1 tbsp of filling into the center of the wrapper then pleat the wrapper closed.
- Steam & Fry the baos - In a bamboo steamer, or any steamer you have, place the baos on to a parchment paper, cover and place over a pan or wok with boiling water. Steam on med-high for 7 minutes. Once cooked, in a pan over high heat with neutral oil, add the baos, either pleat side down or pleat side up, and pan fry for 3-4 minutes or until the bottoms are crispy and brown.
- Serve and enjoy - Add them to a plate, top with chilli oil, coriander, sesame seeds and enjoy!
