These jammy, delicious eggs are called Mayak Gyeran, a dish from Korea that involves marinating soft boiled eggs in a delicious mixture overnight in order to get the most addictive, flavourful eggs! Don't blame me when you eat them all in one sitting, hehe.
ingredients:
- 6 eggs
- ½ cup water
- ½ cup Light soy sauce
- 4 tbsp honey
- 1 tsp dashi powder
- 1 Spring onion, minced
- 3 Garlic cloves, minced
- ½ onion or shallot, minced
- 1-2 red chillies, minced
- 1 tbsp sesame seeds
- 1 tsp sesame oil
method:
- Boiling the eggs - In a pot of boiling water, add a bit of vinegar and the eggs. Boil them for 6 mins for a soft jammy center.
- Cool & Peel the eggs - Once boiled, place the eggs into an ice water bath to cool down, then peel all of them and keep aside.
- Prepare the mixture - In a container, add the rest of the ingredients and give it a mix. Taste and adjust to liking.
- Coat & Refrigerate - Add the eggs into the mixture, making sure it’s fully submerged - you can add a piece of paper towel on top to help evenly distribute the sauce. Then keep refrigerated for at least 6 hours, or better yet overnight - the yolk may harden overnight depending on how cold your fridge is.
- Serve and enjoy - Serve the marinated eggs over warm rice, top with some furikake, fresh spring onions and enjoy!
Notes: these will keep in the fridge for a maximum of 5 days
